In this Academy Course, you will receive an introduction to the main concerns regarding microorganisms in food. Class will describe the organisms responsible for food-borne diseases and spoilage and key factors that affect their growth and survival. Intervention strategies such as heat treatments and food preservation will also be discussed. Participants will receive a certificate upon course completion.
